Gluten Free Apple Butter Pancakes

Remember how I said I had a produce problem? The madness continues – it is well and truly apple season! The days are getting cooler, there are frostings of color on the treetops here, and there are little sunset-colored globes bursting with flavor in the fruit section and the farmers market. Love, love, love! Fall is amazing. And filling.

I was having fun with Hodgson Mill Gluten Free Pancake & Waffle Mix—the basic pancakes are lovely on their own, but I wanted to see if I could pack some fall flavor that I’ve been craving into the finished product. I’ve found I could easily interchange regular wheat-flour pancakes with this gluten-free mix. And then I can invite friends who don’t eat gluten to brunch.  Continue reading

Gluten-free Piña Colada Upside Down Cake

I’d really like to call this “Piña Colada Pineapple Upside Down Cake”, but I feel like it already has such a long, unwieldy name . . . how else can I describe the moist, springy cake softly scented with coconut, with the tangy-sweet fruit on top and the rich dark molasses-y syrup soaking into it? Then for accuracy’s sake I’d also have to add in “gluten-free” and “dairy-free” and “Gluten-Free, Dairy-Free Piña Colada Pineapple Upside Down Cake” . . . that’s a mouthful. Gluten-Free Carrot Cake Mini-Cupcakes

Happy First day of Spring!! (Honestly, it feels kind of like summer here in Illinois.) Flowers are blooming, Easter is around the corner, and my mind has been turning from warm and hearty comfort food to light, fluffy and fresh baked goods. In this case, mini-cupcakes fit the bill: adorably sweet little morsels of smooth, carroty, spicy goodness.

Since I have friends who eat gluten free, and I take most dietary choices as a personal challenge to feed people good food the way they choose to eat, I’ve been experimenting with gluten-free baking. Starting from scratch is a little daunting—all kinds of flours, and my kitchen is already overflowing with ingredients; and who knows the next time I’ll have time to experiment with different types of flours? Gluten-Free Cinnamon Orange Walnut Cookies

We had some comments asking if Holly’s Cinnamon Sugar Cookies recipe could be made into gluten-free cookies. Everybody here at Hodgson Mill immediately volunteered suggestions about the best way to do it, and I think we settled on a pretty simple, tasty solution.

Hodgson Mill Gluten Free Cookie Mix already has five recipes on the box, but I thought orange and cinnamon would be a great new flavor variety to try. I also think adding walnuts rounds out the flavors. The nuts are totally optional, but when baked in these cookies, remind me of a pecan sandy. Continue reading
